About the Recipe
A classic French lunchtime snack brought to the retreat by our lovely retreat chef Camille. These savoury cakes are the ideal lunch box filler.
Ingredients
3 eggs
10cl of milk
10cl olive oil
salt, pepper & pinch of nutmeg
200g flour
2 tbsp baking powder
200g cheese of choice
200g olives (green or black)
Preparation
Preheat the oven at 180°. Beat the egg with
the milk and the oil before folding in flour
and baking powder and desired seasonings.
finally, add cheese and olives. Pour some of
the dough in muffin tray (3/4 filled) before
baking for 15min.
You can swap olives for sundried
tomatoes. Best combos are: feta,
oregano and black olives; green
olives and mozzarella, or sundries
tomatoes, Parmesan, basil and
mozzarella.
