Banana Bread

About the Recipe

Is there any better smell in the morning then freshly baked banana bread? This recipe from Cami our retreat chef is full of fruit and so it's easy to pretend that it's a healthy breakfast if you are feeling indulgent or save a piece to take with you for your packed lunch.

Ingredients

  • 3 to 4 really ripe bananas depending on the size

  • 1/3 soy, oat or almond milk

  • 1/4 coconut oil or melted margarine

  • 3/4 cup brown or coconut sugar

  • 1 vanilla extract

  • 2 cups flour (gf possible)

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 pinch of sea salt

  • 1/2 tsp cinnamon

STEP 1


Preheat oven at 180°. Line loaf pan with parchment paper. In a

large bowl mash bananas until puréed and add the vegan milk,

oil, sugar, vanilla, cinnamon and salt.


STEP 2


In a dry bowl mix the flour, baking powder and baking soda. Add the liquid mixture and mix well! Add chocolate chips or chopped walnuts as desired.


STEP 3


Bake in a pre heated oven for about 40 to 50min until golden brown and you can put a knife into it and it comes out clean. Leave to cool on a rack and then slice, toast and cover with butter to serve.
